23 - 1/2 teaspoon salt
24 - 1/4 teaspoon ground black pepper

# Steps:

01 - Preheat oven to 400°F. Rub chicken breasts with olive oil, cumin, paprika, salt, and pepper. Place on a parchment-lined baking sheet and roast for 20–25 minutes until cooked through. Let rest for 5 minutes, then slice.
02 - Combine farro, water, and salt in a saucepan. Bring to a boil, then reduce heat and simmer for 25–30 minutes until tender. Drain any excess water.
03 - On a separate baking sheet, toss chickpeas with olive oil, cumin, and salt. Roast for 15–20 minutes until golden and slightly crispy.
04 - Whisk together tahini, lemon juice, water, olive oil, garlic, salt, and pepper until smooth. Add additional water incrementally to achieve desired consistency.
05 - Divide cooked farro among 4 bowls. Top each with mixed greens, roasted chicken slices, roasted chickpeas, cherry tomatoes, cucumber, and red onion slices.
06 - Drizzle each bowl generously with lemon-tahini sauce. Serve immediately.

# Expert Advice:

01 -
  • It keeps beautifully for meal prep and actually tastes better after the flavors have time to mingle
  • The roasted chickpeas become impossibly crunchy little croutons that make every bite satisfying
02 -
  • The tahini sauce will seize up at first but keep whisking, it will smooth out beautifully
  • Roasting the chickpeas until truly golden is the difference between okay and incredible
03 -
  • Let the chicken rest before slicing or those juices will end up on the cutting board instead of in the bowl
  • Warm the farro slightly before assembling if you have prepped it ahead
