# Expert Advice:

01 -
  • Everything cooks on one pan, so cleanup is just tossing foil and wiping down a bowl.
  • The shrimp get sweet and snappy, and the peppers caramelize at the edges in a way that makes them taste almost grilled.
  • You can have dinner on the table in half an hour without touching the stove.
02 -
  • Don't overcrowd the pan or the shrimp will steam and turn rubbery instead of getting that nice roasted texture.
  • Check the shrimp at 12 minutes, they cook fast and overcooked shrimp taste like erasers.
  • Warm your tortillas in a dry skillet or wrapped in foil in the oven, cold tortillas crack and taste sad.
03 -
  • Buy shrimp that are already peeled and deveined to save yourself ten minutes of annoying prep work.
  • Let the pan get really hot in the oven before adding the food, it helps everything caramelize faster.
  • Squeeze the lime over the hot pan right when it comes out of the oven, the heat releases the oils in the peel and makes everything smell incredible.
